I know it. I never had pulled pork before I moved here. I would have never thought to mix vinegar and pigs. My immediate reaction was ‘what a bunch of fucking savages!’ After 20 years I rarely eat sweet bbq anymore.

One of the reasons I love the east coast, so many different styles of authentic bbq. I’ve been a skeptic of all of them at one time or another, but once you have that “one” it’s hard to deny that any kind of bbq can be king.
I’d stop in Chicago and pick up a meadow creek trailer with a 300 gallon offset and and 100 count chicken cooker
