By infuser do you mean a nano emulsifier?
Maybe a high shear mixer? I haven’t found anything under 5K used.

I use a Magic Butter machine to do alcohol extraction.
The reason I asked was because I tripped over “nano emulsification” last year (West Coast gummies). At first I thought it was just marketing bs but nope, big difference. I’ve been investigating the equipment since…

That’s what I need to do. The gummy’s are bad that we made but I know it could be better.

Couple key points to making gummies stable.
Use cold water"tap cold is fine" cold not luke warm
Let the gelatin bloom for 5-10 mins before turning on the heat.
Heat slow on melt setting and use a very small saucepan
Use a mold inhibitor Ingredient: Potassium Sorbate.
