The crockpot and oil thing does have a pretty strong smell…especially at first. Unsure if there’s a way around that. I will caution you to wear gloves when handling the oil/weed slurry…it will absorb through skin and you can get very very high. I been there.
The real trick to it, is to use oil and twice as much water in the crock pot. After it has cooked for a good 8+ hours, let it get to room temp, and put the crock pot in the fridge overnight. The coconut oil or butter will harden and form a thick layer on top that can be skimmed off, and much of the bitter green taste and plant material will end up in the water which you discard.
Repeating this step again with the resulting oil and more water will clean the oil of additional impurities and it will taste much more neutral and less like skunky hay.
