Local store has top round roasts $1.97/lb. Makes some pretty fair jerky if you treat it right!

Simplest recipe ever. Marinade is 1/2 soy sauce, 1/2 water. Use all soy sauce if you want. Soak the sliced meat for a few hours in the fridge. You can do overnight if you want.

Get a 3lb roast of the leanest beef you can find. Top round, bottom round, eye of round, or cross rib roast all work. There are a few other cuts that work but the ones I listed you can usually get them cheap if you catch a sale.

If the butcher at your store will slice it for you, go with that. Otherwise you’ll have to partially freeze the roast by putting it in the freezer for an hour or two. Just enough for the meat to get firm so it’s easier to slice. Then I smoke it using apple/citrus/pecan wood@ 140-160 degrees F for 4-6 hours. Finish it in the dehydrator. You can use an oven on the lowest setting if you don’t have a dehydrator, but the dehydrator works best.

I sprinkle crushed red pepper flakes on the meat once it’s done marinating because that way I don’t eat the whole bag.

Have 6 top round roasts in my chest freezer… guess I’ll try and make one into Jerky this weekend!
