Bending and low stress training works great for height control and improved yield. Almost same result as topping just not as stressful to the plant. You are doing well. If they are starting to alternate then it’s, I believe, starting to flip into flower so the real fast growth is about to happen. 7 gal might get you bigger plants than you want. Maybe wait into is full flower to up pot to 7 gal. Maybe I’m wrong but that’s what I’ve come to understand and see in my very limited experience.
