That’s up to you 
but since your an open-minded learner I’d say experiment & take one whole plant if you can & just the ripest or maybe top half of another. Then you can compare. 
As far as humidity, think Afghanistan. 
I was growing in Sacramento outdoors, def not AZ or NV, but it got to 9%RH some days in summer. Flower was GREAT!
Personally I’d say ideal VPD is great for vegetative & early flower but would let it get dry after week 3. 
But I sympathize on the watering
