Hog head cheese. I do like. I like it fresh. My grandma would make it in the head of a pig. Fried pig ear sandwich is good with homegrown tomatoes.

That what he was doing was making hoghead chz. We would make something with livers and the heart. It looked like Black sausage. I would only eat this stuff fresh. I didn’t care for it after it was chilled. I think it was like liver pudding or something like that. I can’t remember the name of the other stuff, but it had olives in it.

Only thing that I might have to say absolutely not to is the cheese they make with maggots. I just not sure I can get past the visual or idea.
Now if I had a good friend like you who just gave it to me and didn’t tell me, I’d probably give it a go
