some say gypsum will help reduce the sweetness and up the dank smell

This may be due to fixing the Cation exchange capacity (CEC).
Also, you really can not get enough calcium into the plant.
So a healthy plant may become dank smelling due to increased health.
Cannabis is usually suffering from salt stress and gypsum flushes can fix that also.

Then there’s a whole headache inducing world of enzymes and processes that could transmute elements within the plant.

I hear ya, the interplant workings are above my paygrade for sure.
The picture/graphs give ya a headache just looking at 'em…LOL

I do feel inputs can have an effect on taste and smell, but unless you are lacking something, I feel it is good to let the plant express itself naturally, unless you find it is lacking something of course.
