Oh my bad that’s a nice dollop of mayo!! Nice🥚!!!

Yeah, I just boil mine, I rinse in super cold ice water and the shells always come off in one or 2 pieces.

That’s really good for home grown do you refrigerate first?

We store em in the fridge if that’s what you mean, on second thought, I let them cool in the water they boiled in to a point where I can pull them out without burning myself, then straight into ice water, it does something to that membrane under the shell (expansion/ contraction) and I get perfectly peeled eggs 97% of the time. I then store them in the fridge

Hot chook is my go-to emergency lunch too. I’ll take the carcass home and put it in the instant pot with water and salt to make chicken broth.

I make Rotisserie chicken Schwarma and Nachos.

Hard to beat that Costco Chicken price.

For Schwarma… the pita is a PITA to get fresh, so i get fresh bakery buns and make it a sandwhich.

Debone the chicken, sprinkle with Davids Schwarma Spice (THE BEST one)…and fry until there are crispy bits.
1 clove of garlic, 1/2 cup of mayo…lemon juice to loosen it and tahini.
Shred lettuce, sliced tomato and dill pickle. Smear garlic mayo and hot sauce of your choosing (Franks THICK and siracha work well).
Add chicken and toppings.

Rotisserie Chicken NAchos.

Bag of tortilla chips.
Bag of cheese , or shred your own. I like the moz/cheddar blend we have for nachos.
1 deboned and shredded chicken.
Taco seasoning.
Nacho toppings like, diced tomato, olives, chopped onion, hot peppers
Toss the shredded chicken in taco seasoning.

Lay chips on a foil lined baking sheet
add the bag of cheese
add the chicken
add the rest of your toppings.
Back at 350 for 8 to 10 minutes until cheese is bubbling and brown on the edges.

These two meals are always well received…
