That’s exactly what I said to Mrs Shadey a couple of hours ago, I hope things don’t start throwing out buds, we have had late frosts in June the last 3 or 4 years, in NS the rule is, don’t plant your garden until mid June to be safe.
Birch sap is delicious! It tastes like the freshest spring day right outta the tree. Flows like a tap too. Maple, depends on the species but sugar maple at my place give me about 1 litre per 5 gallon bucket of sap.
I got a small bottle of birch sap which I use VERY sparingly. It was made on a reservation over an open fire. They don’t sell it, it was given to me as a very special gift.
I’ve never tried the syrup but had to survive off a tapped Birch on a winter camping trip in Algonquin lol. Forgot our water filter and pot to boil snow(we planned an inland trip away from water, although poorly planned apparently). We hadahand drill and bit and had planned to boil maple syrup that trip. Used that to tap a Birch and collected a gallon per hour of the Birch to drink straight from the bucket.
