The only thing I would say about the bag system you describe is to monitor and make sure they don’t dry out or get to hot, worms don’t like soggy soil but will die if it gets completely dry.
I like to build an area of hay and leaves they can escape into in case I water to much on accident , creating something similar to how it would accumulate in nature. My compost piles I turn over monthly but the worm bins get built and then I just add to the top and cover the food scraps so flies aren’t a issue , soldier flies breed at the speed of light , they are a interesting composting tool also but I find it a bit gross.
