My lady and I hit the woods hard every year. Wild foraged mushrooms are a staple in our diets. Who likes to forage as well? Score from yesterday. Cauliflower mushroom. Mmmm so good. Fried some. Dried some.

Favorites for foraging would be any variety of lions mane, lobster mushrooms, chanterelles or maitake. Probably in that order. Black trumpets and morels are okay depending on the dish. I love a good stuffed morel and trumpets make some nice seasoning but i hate whole trumpets.
Havent had good weather the last few years, unseasonably dry. 2022 was an insane year. Was getting probably 2 full paper shopping bags a week of chanterelles and maitake.
Usually tacos are my go to. Cook the mushrooms up like beef or chicken. Stirfry is my backup.
Chanterelles are my favorite. Grew up hunting Morels. Lobsters are good but a bitch to clean. We stirfry often. We dry alot for soups and stews.
Yeah we are out in the woods like every other day during autumns. It is not only about diet but find yummy things out there that make you whoooop ![]()
This was some weeks ago we were plenty gifted with these ones. Then during a period of drought no new had grown, but right now after sm days of steady rain we prep for hike and harvest again ![]()

I can only second this. We get only boletes and some very few, safely identifiable, exceptions, like the Delicious Milk Cap, which is so awesome when coated with breadcrumbs and fried. But my fav currently is the Red Foot Bolete, or as we call it Witch Bolete (Hexenröhrling) for it is changing colour from bright yellow to dark blue within a second when you cut the stem.
Sounds like some fellas who know when not to go guessing. I also love to forage mushrooms but avoid gilled mushrooms as I’m not good enough to identify them. Mostly chanterelles hedgehogs and black trumpets
Very cool find! There was a mushroom thread earlier this year, in the spring. Here’s a couple shots from this past season.
Hedgehogs and Hawkwings are close cousins I believe. We like to marinade them like a steak for 3 days and grill them. Soooo good! In a beef stew they are amazing. Easy to find too.

I picked boletus as a kid. Delicious! My mom would see one on the side of the road driving and stop Haha! I didn’t understand it until I got older.
Sorry I missed that Spring thread. I’m in the desert south west. The forage seasons are a little in the spring and alot when the rains come in the fall. Here are some past hauls.
We usually get some giant puffballs right next to our home in September, especially if we can get some much needed rain.
Last years Giant Puffballs. I cut them into half inch thick steaks, dip in batter and fry them like a steak. They get to be as big as a volley ball. Not as tasty as some morels, but they are still good.
The slight hill they grow on next to our home where I usually find them, especially after a rain in September or early October, will having me leave at least one to spore out to have some for the following year. Never pick them all. Always leave some for spores so the same area can produce the following year. The same with morels. I leave the one that is the highest on the sloping incline they grow on to spread spores for me, so that I will have them again on the following year.
Always interesting to see how similiar the mushroom species in america are to the ones here in middle europe.
We live in a dry pine forest area, so the season really begins middle of september. Boletus, Parasol and krauseglucke (the one in the first post) are the earlier ones. The hawkspiky one, dead trumpets, trumpetcantarells are my favorites.
Never managed to find morells, should be possible to find in the beechwoods alp around here.
I love mushrooms as much as weed.
