Grace's lemon cookies

  • 1 cup of butter
  • 1 cup of confectionary sugar
  • 2 1/4 cups of flour
  • 1 cup coarsly ground nuts (walnuts or pecans work nice)
  • lemon extract to taste
  • confectionary sugar for dusting

    Melt butter and combine with confectionary sugar until the sugar is melted.

Add coarsly ground nut meats (i put them in my blender for several seconds).

Now add the flour

The magic ingredient.... lemon extract...use enough and it will mask the most unpleasant of aftertastes...anywhere from a third to a full bottle usually does it.

Combine thoroughly into workable dough.

Form one-inch ball and flatten into cookie, place on an ungreased cookie sheet.

Bake in a 325-degree oven until the cookies are firm to the touch and slightly brown on the bottom (approximately 12 minutes, give or take a few).

Dust with confectionary sugar while the cookies are still warm (it will melt slightly and create an icing).
