What about grains and nuts, are those added to the compost and worm bin or just powdered and fed?

I’d add those straight into compost.

the guy says he sterilises the bone by boiling? is that necessary? Crab shells are made like bone meal i guess, and fish bone as well?

Sterilization sounds reasonable to me. Maybe boiling is also preferred because bones become brittle and will be easier to crush. (just guessing here)
