My thought exactly. Red Diane yam goes into the oven first, then the applesauce gets made, then a slab o hot seared flesh. Praise the lard!
I donât know how most chain grocers operate, but sometimes, if you ask real nice, you can get bones and trim for soup/stock/sauce. Most of the time, its not much. But itâs honest barter.

The applesauce is one each, a large granny Smith and a large golden delicious, and a small golden delicious, all peeled. I also put in a little sugar. Thatâs about 1/3 of the applesauce. I love fruit! It was all delicious!
Iâve been known to make a similar dish with Dr pepper pork jus. Shallots, star anise, cloves and currants, fresh thyme. Butter. I think itâs funny to put soda pop in a fancy dish.
