Indeed! I ate my weight in frites with mayo my first time in holland. So good!
I used to own a pomme Frites food truck (I’ve mentioned it before around here).
Couldn’t get folks to try the fries with mayo… Until we changed the name of the sauce to “aioli” 
Warre Frites are my fave…mayo, diced onion, and peanut sauce

A friend of our has a vegan restaurant/food truck that serves something similar, that is damn good!

Not a damn thing! We used to slow cook garlic in oil for a half hour, then toss the fries in the oil, slice the garlic, mix with parmesan, and then to the fries with that!
