Good morning/ afternoon, that was a good time last night everyone. The food, the people, the weed, did I mention the food? @Oldjoints, Brother, it has been years since I had a steak, and i use that title VERY loosely (“steak” fuck those were slabs) that tender. You got skills brother. Thank you so much for the invite, we actually got there early enough to meet everyone even if we were the last to arrive.

I agree leave it out on the counter for a while, select a great cut that is either choice or prime, salt and pepper Cook it hot cook it quick. Then give it time to rest and relax. Let those juices come back in and the salt penetrate. That get together sounds like a blast, I might have to make a road trip next year. I love all those pictures too, especially the back of that beautiful guitar that finish is amazing, Is that in Maple body?

I like to start out good and hot to sear the meat and then reduce the heat during the longer cooking. Get it to temp slowly and then let that dude rest for a while before cutting into it.
That’s worked well for us.

Have you ever tried a reverse sear? It’s a little time-consuming, but it is well worth it. If I’m lucky, and the Mrs. will let me splurge to buy a tomahawk ribeye I will reverse sear it, then pull it out of the oven straight to the hotter than H E double hockey stick cast-iron for some color and crust
