When the stem breaks like a child’s greenstick fracture ie the top half of the break Snaps but bottom half kinks , that is sign it’s 70 or just below and safe to start curing in the jar , a rough guide for if you have no meter : )

Try to get that 20c temp down to 17 if you can : )

I do that then inevitably get baked and end up forgetting about until until its way too dry lol. The bags are nice because they are sloooow
