I’ve taken potatoes/chunks of potato, let them grow some eyes. Then planted in the ground and grew a whole bunch more taters.

Do it. We grew potatoes last year. Kinda screwed them up and they were all smallish. Still made eatin potatoes though.
They grow good in 20-30 gallon fabric pots
As opposed to throwing potatoes.
Let the eyes grow out a little then cut them into chunks with each piece having its own eye to root from. I’ve been growing them this way for a long time but I use starter potatoes from certain types like Yukon Gold and grow them in trash cans.
You got enough good weather to put them in the ground? If not, they need at least 10 gal pots. Bigger the pot, the bigger the taters. They make some really neat potato growing pots. Like this
