Do you use mayo on your bread instead of butter? If not you should give it a try, cooks faster and has a butter crunch and taste

Yes, such a game changer. To me it’s not that it cooks faster, it’s that you can get a nice brown on the bread while fully melting the cheese.
I can’t remember if it was Cooks Illustrated or Milk Street but some cooking mag turned me on to the superiority of making grilled cheese using mayo instead of butter.
I consistently shave about 2 minutes off my grilling time. Just better flavor and less oily
