Hey @Not-Notjosh everybody has to make their own call, but from a ripeness perspective, I think you’re gonna be disappointed if you chop her.
Looking at the top growth, it looks like she revegged on you at some point (which would explain the long flowering time), so she still has a lot of bulking up to do. Also, there’s no sign of senescence in that plant…no yellowing or fan leaf consumption; that’s still a developing plant.
The flowers are so loose and they have so many white pistils, it’s definitely not ready, but if she’s gotta go, she’s gotta go.

Holy cow! Last time I had that many cuts sitting out my cat thought it was an all you can eat buffet and he got obliterated for hours lol. I can’t trust the cats around here they chomp my plants up any chance they get

Oh man, you have no idea! It’s pretty damn chaotic that’s for sure. Going vertical has helped, plus having Mikes place is nice too but that’s only temporary. Bonsai moms are clutch, my mom/cut list is absolutely unreal and now it’s just getting them all trimmed/trained properly for optimum use of space, most are in 1-2 gallons atm . Once I have everything run I can start weeding any out that don’t fit, or suit my smoking and/or breeding needs. I have a few more LEGENDS to obtain but then I’m chillin for a long while and going to enjoy throwing it back for a while.
