Yeah I’ll compulsively eat it for the next couple days it was only 4 boneless skinless breasts but with a whole jar of salsa in it , it fills you up quick

Making a pot of Chile Verde from scratch. Sear the meat till brown on all sides in a little olive oil, then deglaze with chicken broth.
I roasted Pueblo chiles (Anaheim variety), poblanos, seranos, garlic, onion, and tomatillos. That’s what’s in the food processor. Give it the herbs and spices and combine it all to simmer for about 2 1/2 hours. Then add a roux made of masa and oil near the end.
Tortillas watch out!

Both my wife and I used to be chef’s in a former life back before we realized the work was insane and the money sucks.
We eat well though

Rib Fillet
Smoked salmon. kiplfer potatos and asparagus
Red wine lamb shanks with polenta and salad, sometimes I make this with gnocci instead of polenta
Fresh mud crabs straight from the crab trap to the pot… awesome!
