Here we have a 12 hour smoked Texas style brisket.
One on my favorites. Just salt pepper,beef and smoke.
Takes a bit but makes many meals and freezes well.
I still have to make one of these… in general USA food has a bad reputation due to all the fast food brands and image projected by them, but man how I am amazed by all the diversity of food you guys have. I´m a big fan of slowly cooked food, or pressure cooked then roasted food.

Wow, that looks amazing.
Nothing pretty but sure did taste good. Fries double fried in beef fat tossed in cajun and a beef tenderloin seared in bacon fat and finished in the oven and rested with some butter.
Also a small piece of beef brisket smoked with black cherry, corn muffins with some jungle honey from Oaxaca with a really different taste and some mac and cheese.
It is some work for sure.

try placing that meat in the oven for 24h at 45/50º Celsius… it will cure and be like butter… but it won´t over cook it. Almost looks like wagyu.
For me the best cut ever for stakes is ribeye
