I must admit, I have a difficult time calling dim sum meatballs. That bottom picture looks an awful lot like shu mai, which are primarily shrimp and pork. I think theyā€™re more dumpling than meatball.

Whatever we call them, though, Iā€™ll bet they were delicious!

I like them with my Dadā€™s ā€˜unofficialā€™ N. Carolina dippin sauceā€¦
Ketchup, Lea & Perrinā€™s Worcestershire , and horseradish!!

No one here likes them either. These were all mine and Iā€™m full. I like mustard, cayenne paprika, and garlic dipping sauce. Very close to what I dip Artichoke inā€¦ this was so overdue and just a damn good meal.

I had a beef and dough fritter rice noodle roll as dim sum the other day.

Ground beef ball and a fried donut with cilantro wrapped in a rice noodle sheet and doused in peanut sauce and hoisin.

Most of my family thinks itā€™s weird but itā€™s an awesome fusion of textures and itā€™s really quite delicious.

Picture from our porch summer 2021 - Shrimp tacos with home made salsa using tomatoes, scallions and Anaheim peppers from the garden, avocados, eggs, onion on some sort of puffy bread/tortilla along with fresh picked blueberries from the garden on cottage cheese. Can hardly wait for getting past these rivers of rain and into summer again.

For my bread itā€™s 150 g start, 20 g olive oil, 10 g salt, 250 g water, 500g bread flour. Proof over night. Bake at 400 covered in a Dutch oven for 20 min. Then uncovered for 40 min. Optional egg wash for color and crust. As well as placing a oven safe pan with water to steam whilst baking.

Pretzels are 100 g start, 255 g water, 40 g honey, and 500 g bread flour. Proof over night cut into pieces and make shapes. Then Boil in 6 cups of water, a gram of brown sugar, And two tblsp of baking soda for 30 sec each side. Then bake for 10 to 14 min at 375Ā°

To make sourdough start. Mix half water with with half flour. Let sit overnight,. Split in half and add two equal parts of water and flour again every 24 hours. Repeat until sourness comes, and or you see activity in the form of bubbles along your jar. Keep in mind it will take one week for your start to become active enough for baking.
