Right on brother! Yeah good storage is key, I tend to wrap them up in parchment packs 5-15g at a time and vacuum seal them and into the freezer they go until I am ready to consume. Yes they will turn into ice pucks but just let them sit at room temp for an hour when you are ready - if stored hermetically (sealed airtight via heat seal) and they will be as you left them for many months at a time.
