Duck meat has very little fat. Compared to chicken, turkey. Wild duck anyways. Thats why when i cook it, i always cut the meat in to chunks and wrap with bacon. Bacon for the fat more than taste.

Or wrap the whole bird in bacon on spit over fire and baste often. You can even stuff it with some bacon that is nice and fatty to help as it cooks.

I dont get wild duck very often. Not much of a hunter. More a fisherman for outdoorsy stuff. I like to fish from a kayak.
I get wild duck from a good friend in Stutgart Arkansas who hunts duck every year. I like your idea of stuffing the whole bird with fatty bacon and the outside on a spit. Mouthwatering.

It is nice, as the bacon melts it drips out and since it’s rotating on a spit it basically bastes the bird as it turns in yummy bacon drippings. Use a nice Hickory wood and MMMM good.

Domestic ducks especially Pekin are extremely greasy. Muscovy aren’t really a duck , but areally just called that by name .

I know im a new member and you guys have given me lots of info already, but does anyone have any California Orange bud or Laughing Gas seeds? I’d like to have some to grow indoors during the winter. Thanks anyways, I love this camaraderie.

Muscovys that I’ve had have still had a nice layer of fat under the skin, both on wild and farm raised I’ve cooked. Not too much, but just enough. The breasts like to be left more rare than other ducks for beat taste and texture, like a giant squab breast.

@FailingForwards i hear you on the goose. I’ve tried and tried, and the only way it’s been really good is slicing thin and a really heavy handed marinade. I love cooking and eating birds, and goose is almost definitely my least favorite that I’ve had

We have a restaurant called Duck Fat here, everything they make is cooked with duck fat instead of other oils. Fries have options of some very fancy dipping sauces, Truffle Mayo was interesting.

The Muscovy duck (Cairina moschata) is a large duck native to Mexico and Central and South America. @Alphatoy Muscovy are not related to mallards which is where your domestic ducks come from . Muscovy are a tree dwelling water fowl . Duck | Animal & Food Sciences
