This is the whole plant I’m new at this so excuse my ignorance. Every time I think it’s ready to harvest more white hairs pop out so I guess I just let it go?

Looks like she needs more time
Look for 75 % of the hairs withered and have changed color
Plant swells up in the last week to week and 1/2 before it’s ready
Look at the trichomes at least 100 % cloudy is good I like 15 to 25 % amber
The more amber the more couch luck
Be patient and I find it better to trim once dry

Don’t rush things that one of the biggest mistakes
If you harvest too soon no good
There’s a short window between ripe and degrading so just keep an eye on it
Also I take a sample bud to verify it’s were I want it
What strain is it and what did the breeder recommend for flowering time

What @Papalag said. Invest like $15 in a jeweler loupe and watch the trichromes. How much clear/cloudy/amber ratio is up to you. Amber means your thc levels have peaked and has began degradation and has started creating cbn. So up to you

How long has it been flowering for and what’s the strain name .?
Did you take the fan leaves off yourself or did they fall off .?
I would give it a week more max - plus you should/could take a bud now and sample it in a few days when dry ,plus buy a jewellers loupe, to see the trichomes - ( as @Papalag + @Joboo said 
) - are either cloudy or Amber + harvest according to the trics’ colour .!
