I just discussed this with a friend that sells sprouts @ farmers markets/etc. She says the taste is on par with sunflower or mung bean sprouts, and the nutritional profile is similar to sunflower sprouts. She hasn’t done them previously, primarily due to seed sourcing, so now we’re talking about finding the right hemp seeds for our area and doing our own outdoor open pollinations.
