I filled the truffle with a 1:1 water ganache of Hennessy and homemade white chocolate. It came out to a cookie dough consistency, even when frozen. Fucking 40 proof truffle, has a bite to it. Lmfao.

For the bagels we just use an egg wash.
We do use an alkaline bath when we make pretzels. We don’t use lye just plain old baking soda.

Caramel Sauce, with yogurt in place of the butter and cream.
Split it 50:50, one batch will stay clean, the other is mixed 50:25:25 with scotch and white chocolate.
