I boil the hell out of it then I deep fry it…when I’m done deep frying it I take a ladle full of hot ass oil and I pour it over the pata until I get the desired crispiness of the skins…you might have to pour the hot ass oil over the pata several times…I’ve also heard that some people use an air fryer to achieve the crispy skin. There are several ways to prepare it just YouTube Crispy Pata…
