Last night was a quick beef stew ala Jacques Pépin. It was quite tasty. At least part of the reason I made it was those are fresh English peas, and not one of them was over ripe! Did I mention that I love English peas?! The meat is a rib eye. There’s (red) onion in there too.

The only thing I will change the next time I make it is I will make more of a sauce. It was drier than I wanted.

I’ve been eating savory breakfasts every morning for quite a while now, but this morning was French toast with maple syrup and a little powdered sugar. Very little. :joy:

Ever try it ‘Swedish style’?? Butter, powdered sugar and fresh lemon juice!!

That’s definitely going to happen the next time I make French toast! I make a lot of guac and only use fresh lemons. I hates me some bottled citrus juice. :face_vomiting:

Tonight I am starting a loong meal prep…Tomorrow I start Keto…
Tomorrow making marinated crispy tofuand cruchy chickpeas …today I made Chaffles and a dozen hard boiled eggs that will become deviled eggs tomorrow.
What is a Chaffle you ask?
Those of you that do no carb/low carb/Keto may already know-- but they are mini ‘‘waffles’’ made of mostly cheese and egg and used in place of bread/pizza crust etc…
The ones I made are actually high protein version made with ground turkey…can be eaten ‘as is’ or as a base for other things like pizza or tostadas etc… you just reheat them in the oven, toaster oven or air fryer.

Mix 1/2 lb ground turkey with a 8oz shredded cheese of choice, seasonings of choice, 3 packed TB almond flour and 4 eggs.
Then spray your mini waffle iron and cook them babies up–cool and freeze.

This batch has half sharp cheddar half Carolina Reaper Pepperjack, garlic, green onions, Lowrey’s, Soy Sauce, Dijon, and Worchester sauce as seasonings as I plan to eat them either alone, topped with cheese or as a tostada base.

I used to run a kitchen at a small restaurant nearby who’s breakfast specialty was Swedish pancakes-- served with lemon wedges, lots of butter and a sprinkling of powdered sugar.
HUGE Scandinavian population in this area… along with the Amish and Polish areas of ‘‘town’’…

I don’t like guacamole as much as I prefer just mashed avocado…
When I do make it- it’s just avocado mixed with some good Pico-de-gallo… :wink:

For me personally, I prefer a regular lemon. I’ve tried Meyer lemons. I like the punchier, “regular” lemon.

Gotta get back down to where I was when I was doing freelancing for SKUNK magazine… that was 10 years ago… got a LOT of work to do…but when our new insurance kicks-in on Jan. 1st, I get to start using the Local Gym and pool…I’d like to lose 10-15 by then.
Bad enough some old broad coming in to work out- but a fat old broad, I’m gonna get looks & comments…
But- at least I’m trying to better myself. :blush:
