This is a super hot sauce with lots of flavor (and pain). Please don’t let the fact that carrots are in it bother you - you truly cannot taste them.
Reaper Madness
Ingredients
- 1 1/2 cups chopped carrots
- 1 1/2 cups white vinegar
- 1/2 cup water
- 1 head of garlic (minced)
- 1/4 cup fresh lime juice
- 1.5 tbsp coarse, kosher salt
- 1 tsp fresh cracked black pepper
- 1/4 cup coarse grain or Creole mustard
- 5 or 6 Carolina Reapers (fully ripe - stems removed); MORE if you love pain
Servings: Approximately 4 1/2 cups
Instructions
-
Combine the carrots, onion, vinegar, water, garlic, lime juice, salt, pepper and mustard in a medium saucepan. Bring to a simmer over medium heat and cook, stirring occasionally, for 10 to 15 minutes or until the carrots are soft. Remove from heat.
-
Use an immersion blender or food processor to puree the mixture. Add the Carolina Reapers and continue to puree until smooth. Pour into sterilized jars or bottles and process in a hot water bath for 15 minutes.
Just made this batch yesterday.
