This is a super hot sauce with lots of flavor (and pain). Please don’t let the fact that carrots are in it bother you - you truly cannot taste them.

Reaper Madness :fire::hot_pepper: :exploding_head:

:sunglasses:

Ingredients

  • 1 1/2 cups chopped carrots
  • 1 1/2 cups white vinegar
  • 1/2 cup water
  • 1 head of garlic (minced)
  • 1/4 cup fresh lime juice
  • 1.5 tbsp coarse, kosher salt
  • 1 tsp fresh cracked black pepper
  • 1/4 cup coarse grain or Creole mustard
  • 5 or 6 Carolina Reapers (fully ripe - stems removed); MORE if you love pain

Servings: Approximately 4 1/2 cups

Instructions

  1. Combine the carrots, onion, vinegar, water, garlic, lime juice, salt, pepper and mustard in a medium saucepan. Bring to a simmer over medium heat and cook, stirring occasionally, for 10 to 15 minutes or until the carrots are soft. Remove from heat.

  2. Use an immersion blender or food processor to puree the mixture. Add the Carolina Reapers and continue to puree until smooth. Pour into sterilized jars or bottles and process in a hot water bath for 15 minutes.

Just made this batch yesterday.

No chef here.
But today I scored.
I love cheese, sheep’s is up there for me.
Any style.
We went to the mid Easter grocery
To pick this gold up.
Sometimes I eat it plain with tomatoes, olives.
Sometime I put it on a Ritz
And drizzle parmagranite molasses
Over that.
It goes well in a salad as well.
My old lady has a few Hungarian
Dishes, I see if I can get her recipes.
18 bucks a can is a deal Imo.
