On a 2-3 yr old the neck makes great stew. But we normally do a neck as a roast. Put a nice heavy rub with a lot of pepper in the mix on it and wrap it up in aluminum foil (I like to add some dark beer before closing up the foil). Then just slow roast it until it just starts falling off the bone.
The neck is never wasted. There’s so much good meat on them.
@mainerJ just have to say another thing about your jerky. My wife is not a fan of jerky at all, she did however eat almost half of what you sent me!

thats what i like to hear! i have converted a lot non jerky people over the years. and a most of those are women who did not care for jerky. glad you both enjoyed it.
