Cool design, of its Japanese steel they should be really good.

Wondering what the tension is going to be like, for compression. Might make the fingers ache if you have carpal tunnel, or arthritis.

It has no tension. I’m not a fan of the ones that spring back. These blades are small so you don’t open your hand all the way for each cut. Fairly good design, light weight and super sharp.

The chinese used those to cut chicken
I got mine at Lee Valley tools
4 or 5 different size for 30$

@Barefrog very cool. I got using them a bit today. I really like the ease they open/close and cut with and my hand sits nicely in the Handel. Gotta wait a few weeks until I can really put them to the test.
