Ok you need to add a bit more vinegar, very small amounts to get it close to a PH of 6 as possible. Make sure you stir it well so its mixed evenly, before taking another PH reading. The only reason I said just a couple of mil was because I thought your nutrient and water mix would have a lower PH.
Man that is a fairly high PH when you add the nutes.
TLO growing can almost be considered a āJust Add Waterā growing style. Rather than buying premade
mixes, in TLO growing you prepare the soil mix yourself. This allows the container soil mix
environment to stay relatively the same over time as far as pH and nutrient levels are concerned, and
this in turn is conducive to the microbial life and allows them to reach the equilibrium of a delicate
and balanced soil food web.
The small amounts of water and nutrients you are feeding at are probably being affected by the soil and lowering the ph. If you were to be watering half a gallon at a time, it may be a problem.
So when reducing the ph of your water and food just add small amounts of vinegar at a time you donāt want to go past a ph of 6 unless you have something alkaline to raise it up a bit again, like a bit more nutes.

I tried doing that with distilled white vinegar a few grows ago and I couldnāt get the test strip to change color at all.
I finally gave up and grabbed the ph down.

Thats odd when you used the PH down did the PH drop more than normal for the amount you added?
Try putting a test strip in the vinegar directly, see what happens, you might have a secret vinegar drinker in the house replacing the vinegar with water or a faulty test strip
I have always used apple cider vinegar for my PH down, I will try some distilled and see if its different.
Just keep her at the same level of feed and time between feedings that you have been doing, she is looking very good.
If the PH meter is registering the same measurement as the solution after you calibrated it it should be good. So if you have any of that solution you calibrated the meter with left, put the meter back in either one and see if its the same reading as the solution.
You have removed the coconut fiber, I can see the soil now, it looks very fine and compact, like cococoir, it could do with more drainage material in it to allow air to get into the root system better, but you canāt do that now, on your next grow see if you can find some perlite or similar to add in the mix, you want about 25% of the mix being drainage material. If you re pot it into a bigger pots you could add some then to the new soil being added.
Itās growing fast now, you could up the amount of food in the water a little bit, get the leaves a little darker, but itās looking good
