Thanks, that’s my first attempt at a brisket. Hit 150f and stalled for around an hour and a half while dropping to 145f. The last half an hour it started to slowly rise so up to 151f now and climbing. It will be cooking a while yet but I am hoping it turns out ok. :crossed_fingers:

Thanks man. Was just under 15lb before I trimmed it. Not sure exactly how much it weighs now.

A smoking secret, when whatever your smoking stalls, wrap it in either foil or pink butcher paper and carry on.

Thanks man, I read about that but figured I would ride it out. Not helping that it’s been raining all day so RH is through the roof outside. I really want to get it to 165f before wrapping. I was going to use tinfoil but going with butcher paper to try to keep the bark crispier.

The pink butcher paper is different from the white as it allows heat/smoke to permeate the meat, while holding the juices. It going to be tasty, good luck!

The paper I got is brown but still unbleached, uncoated and unwaxed food grade. I could not find any difference between the pink and the brown when I was researching. Is there any difference? This is what I grabbed.

Sorry about the chronic posting but I am excited about my first brisket, lol. So here it is. 11.5 hours smoking, hit 160f and wrapped it up into some butcher paper. Back into the grill it goes. Looking good as far as I can tell. Definitely forming some nice bark from what I can see.

Congrats on your first brisket! I had a point in the freezer that I smoked last weekend; just over 7 pounds. 17 hours to smoke and 7 minutes to eat :rofl: It’s definitely a labour of love. Enjoy your feast :dash:

Just got home and unwrapped my brisket from the butcher paper. First time using the new grill and my first time cooking brisket. It’s been resting for 20 min now and I will leave it for another hour until I carve it up for dinner. Seems to have come out ok.
