@Elpolloloco soaking overnight in ice cold water with a fistful of salt and a splash of vinegar also makes a better finished product because it pulls some of the water out of the potatoes

Mmm sounds great. I’ll have to try freezing them, that may be the ticket. I think I had the temps wrong and have a candy thermometer so I’ll try yours next time.

Did you have any secrets to replicating a similar quality / color fry with a russet? I noticed the kenebec have a month or so where quality is poor or under size (storage crop is deteriorating before new harvest) but the russet always seems to be available in my area, and good quality.

The color is always going to get darker with a russet, but doing the par fry at a lower temp (maybe 300), and fry at 350 will get you closer to the quality.
The kenebec season really is variable, with early and late season harvests being small and weird shaped potatoes.

Ive got the same thing going on in my fridge… Eggs, Milk, Gun case full of seeds you know the usual stuff

Food. And seeds and small jars of weed.

Oh and unsweetened canned pumpkin. Got it cheap during Halloween time.
My 18 lb. dog eats 1 teaspoon a day for the fiber. Pumpkin helps him poop easier. No more “dragging his butt” on the rug. To my wife’s relief!

The last interesting thing was a few contaminated petri dishes.
One was extremely strange. I was a little scared when an ugly and evil eye looked at me from the plate. , One twisted culture for sure. Fortunately, I destroyed it in time

I could take daily photos of the fridge and it still wouldn’t stop anyone from opening the door to idly stare three times every waking hour.
