Eggplant made my hate list of veggies not to eat
The big ones are more for Italian dishes(eggplant parmesan) but I rather like the smaller asian version…I actually like these Japanese version called Ichibans…I grow both the Italian & Japanese version of eggplants in my garden…I make breaded eggplants with the Italian version…

You can use a gas grill or charcoal grill outside…the main thing is charring the skin, it gives it flavor…its like charring peppers…
