Follow the bouncing bluefish. A treasure of the sea. These creatures were harvested, bled, and iced immediately. Solid fighting fishes in the 8-10lb range.
Packed in shaved ice for 24 hrs, came out hard as a rock, filleted and into a ākitchen sinkā brine for 48 hrs.
They have been rinsed and dried. 1.5 hrs in the cool dark place to create the Pellical / skin, that absorbs the final baste. What is the magic baste?

Ok letās spice this up. The first og to guess the main ingredient of the baste wins a pack of tripping walrus beans. Solid growing plants, very potent, with a little chem edge on the nose, a little sweet on the combust.

ok, there are two ingredients in the final baste before hitting the smoker.
one is the applicator/glaze, one is a common spice
guess either and the seeds are yours.
