In the South we pot roast it (beef tongue) to make gravy and eat the gravy over rice with the meat sliced. It is stuffed with garlic, onion and seasoning before cooking.
I also cook/eat beef hearts, first in a crock pot then I put it in the fridge for 24hrs. then I grill it, nice and tender and delish folks…old pix.
@saxo, once you have cut the individual Brussels sprouts off the stalk, you can’t staple them back on.

I like it at the local place in tacos and burritos. It’s damn good. Never had it any other way than some Mexican food. I think it’s really good. Many people turn their head at it. they r missing out.
