That’s all it’s done for the last 6 days… 6 days not one break in the rain, ffs

Ugh, this was fun at first, but after over 6 hours I’m just letting my last run soak, so about an hour or 2 till I’m done, then cleanup etc… I’m drunk, I’m stoned, cold, and wet  but I’ve processed a lot of trim. 2oz shy of 2lbs. Still going, the smell of dinner cooking has got the juices flowing!

5 more hours, I didn’t finish up until midnight. I’m hurt amd tired. After cleanup ot was a 13 hour day of non stop hash extraction. After which, I remembered I’m smoking a brisket today, so, trim trim trim, slather in mustard and season and back in the fridge hot the sack for 4 hrs sleep, and threw the brisket on the smoker.

…fuck it, im goin back to bed for a couple hours

I try and rock a brisket 3 or 4 times a year. I love my smoker, did some sockeye salmon the other day for a cream cheese salmon paté.

Looks delicious, mine will smoke at 225°C for about 10-12 hours, then get wrapped in an towel amd set in a Coleman camping cooler to rest for an hour or 2. Will be accompanied with Baked beans, potato salad and coleslaw

From the butcher, a trimmed brisket cost me $180 last year (14lb) it was outrageous, but I promised it for a gathering, so I bit the bullet and got it. But a couple months ago I picked up 2, 16lb brisket, for $60 each from a local grocery store in a sale. I’m definately ONLY buying them in sale now

This is they way.
The way of the Brisket.

Now I’m actually gonna bug my folks who are always asking: “Do you want anything from Costco?” by answering: “Brisket, only if on sale.”

The 2nd through 4th washes of my first batch last Friday dried, moulded and firmed into a temple ball… a rather large temple ball, lol.
